目前台灣農業市場缺乏高經濟價值的產品,導致農民生產相關作物的意願降低,有些選擇繼續種植有保證收購價格的水稻,有些則休耕領取補助金,這樣的現象造成水稻產量過剩(一方面也因為飲食習慣改變)、休耕地過多、雜糧作物大量仰賴國外進口,然而當遇到國際糧價波動、產地控制出口、鄰近國家爭購糧食,台灣的糧食危機將難以掌控。近幾年,雖然農政單位積極輔助小麥與雜糧生產,但其生產量仍然微不足道。除了國際貿易因素,雜糧種植成本過高,導致農民生產意願低,也是成效不彰的原因。 因此我們希望能藉著推出具有高經濟價值的精釀啤酒—以台灣在地生產的雜糧(小麥、大麥、蕎麥、玉米等)釀造具有在地特色的啤酒,以創造農業市場新價值產業鏈。當達到一定的市場需求程度時,便可和農民契作生產,藉此保障農民收入來源並提升農民生產其他作物之意願,並推動另一波農業結構的改革,增加作物多樣性,間接降低雜糧進口量並提升台灣糧食自給率。另外在地生產、在地釀造,除了縮短食物里程、減少碳足跡外,更可添加台灣原生香料植物與當季盛產水果,增加產品的台灣特色,相信能夠成為提升農業競爭力的商品。並期待在這樣的生產過程中,可增加台灣農院相關科系的學生參與農業的機會,並縮短學術界與產業界的距離。

We are Alechemist. Our goal is make a product that would benefit the agriculture in Taiwan. Since our background is agronomy, the study of food crop, so the product of our choice is beer. There are various crop which can be utilized as the basic ingredients for beer. Some common cereal grains that people see everyday like barley, wheat, corn, buckwheat, oat, rice, etc are all possible starch source for us to utilize. We are using these crops which grown in Taiwan to brew our beer, and hope we can raise the production of all kinds of cereals on the island, and indirectly help to increase the utility of abandoned farmland in Taiwan. From materials to product, crops to beer, we try to build an integrated industry system and have positive attribution to Taiwan agriculture and make a beer that is truly worthy of the name Taiwan beer.
